Making Rainbow Sushi
    Equipment
  1. Bamboo sushi rolling mat

  2. Plastic wrap

  3. Sharp knives

    Yanagiba knife-slicing fish

    Usuba knife-cutting raw vegetables

Deba knife-clean and fillet whole fish

  4. Instructions
  5. Step 1: Prepare the Sushi Rice
    • Rinse the sushi rice in cold water until the water runs clear.
    • Cook the rice according to the package instructions.
    • While the rice is still warm, gently mix in the rice vinegar, sugar, and salt. Allow it to cool to room temperature.
  6. Step 2: Prep the Ingredients
    • Slice the cucumber, avocado, carrot, red bell pepper, and yellow bell pepper into thin strips.
    • Cut the fresh salmon or tuna into thin sashimi-style strips.
  7. Step 3: Assemble the Sushi Rolls
    • Place a bamboo sushi rolling mat on a clean surface and cover it with plastic wrap.
    • Lay a sheet of nori, shiny side down, on the plastic-covered mat.
    • Wet your hands to prevent sticking and evenly spread a thin layer of prepared sushi rice over the nori, leaving about half an inch of nori at the top edge.
    • Arrange the sliced vegetables and fish horizontally across the center of the rice-covered nori.
  8. Step 4: Roll the Sushi
    • Carefully lift the bamboo mat's edge closest to you and roll it over the fillings.
    • Apply gentle pressure to shape the sushi roll while rolling it away from you.
    • Seal the roll by moistening the exposed nori edge with a bit of water.
    • Repeat the process with the remaining ingredients.
  9. Step 5: Slice and Serve
    • Use a sharp knife dipped in water to slice the sushi rolls into bite-sized pieces.
    • Arrange the colorful sushi pieces on a serving platter.
    • Sprinkle sesame seeds over the top for an extra crunch and a touch of elegance.
    • Serve your vibrant rainbow sushi with soy sauce, pickled ginger, and wasabi on the side.
